  • Instant Pot: Set the Instant Pot to the sauté setting. Toast the rice. Once golden brown, add the water, lime zest, and salt. Seal the Instant Pot and turn on the rice setting. Once finished, quick release the rice and allow it to rest uncovered for 10 minutes. Fluff with a fork and squeeze on fresh lime and gently fold in the cilantro.
